Prime Rib
Your guide to serving up the best dish of the day! Our Prime Rib has been in high demand in recent years. It is a more expensive piece of meat but for smaller parties it is a special option. We carry it as Standing or Boneless and as Seasoned or Plain.

  1. **Also, note that we strongly recommend using a cooking bag and following the directions off of the box. We as a family almost always use one when we cook any meat entree.**
Instructions
  1. This guide does not necessarily determine doneness. The best test is the temperature of the meat. Insert a meat thermometer in the center of the meat without touching the bone if there is one. Make sure the Prime Rib reaches 160 degrees for medium or 170 degrees for well done.
  2. Prime Rib Size & Approx. Cooking Time
  3. 4-6 lbs. for 1-3/4 to 4 hours
  4. 6-8 lbs. for 2-1/2 to 5-1/4 hours
Notes
  1. When the correct internal temperature is reached, pull it out of the oven and let it rest for a few minutes before slicing. This allows the juices to settle and soak in.

Bacon Bleu Cheese Filet

Ingredients
  1. 1 Wind & Willow Bacon Bleu Cheese Cheeseball & Appetizer Mix
  2. 8 oz cream cheese
  3. 4 Tbs butter
  4. 1 Filet Mignon or your favorite cut of steak
Instructions
  1. Preheat oven to 350 degrees. Prepare Cheeseball Mix as directed on package and set aside. Season steak with salt and pepper to taste. Cook steak in skillet over medium-high heat until a dark crust has formed, 5 to 7 minutes per side (reduce heat if meat is browning too quickly). Holding steak with tongs, quickly brown all edges, turning as necessary. Top steak with Cheeseball mixture and sprinkle with Topping packet. Bake in oven until steak is almost at desired temperature. Turn oven up to broil and continue cooking approximately 3 more minutes until cheese browns. Remove from oven and let steak rest before serving.
Tips
  1. -Add Bleu cheese crumbles on top of Cheeseball mixture for added Bleu cheese flavor!
  2. -Top steaks with as much Bleu Cheese mixture as you like.

Taco Ring

Ingredients
  1. 1 pound cooked ground beef
  2. 1 package taco seasoning (or if you use bulk, enough for 1 pound of meat)
  3. 1 cup shredded cheese
  4. 2 Tb. water
  5. 1 package crescent rolls
Instructions
  1. Heat oven to 375.
  2. Combine first 4 ingredients.
  3. Arrange crescent triangles in a circle with the bases overlapping and points are out on a 13" baking stone or sheet.
  4. Spoon meat onto triangle bases.
  5. Fold points over meat and tuck under.
  6. Bake 20-25 minutes until brown. Serve with any toppings desired.

Pizza Casserole

Ingredients
  1. 1 pound ground beef
  2. 1 can cream of mushroom soup (or use our no msg mushroom soup mix)
  3. 1 can pizza sauce
  4. 8 oz of cooked macaroni
  5. 1/2-1 cup Parmesan
  6. 8 oz shredded Mozzarella
  7. 1/4 tsp garlic salt
  8. 1/2 tsp oregano
Instructions
  1. Preheat oven to 350.
  2. Mix all ingredients and put in casserole dish.
  3. Bake for 1/2 hour. Delicious!

Oven Burritos or Wet Burritos

Ingredients
  1. 1 pound Ground Beef fried with onion salt
  2. 1 TB natural, no msg added Taco seasoning
  3. 1 can refried beans
  4. Mix 1 cup sour cream and 1 1/2 cups cream of mushroom soup (use our bulk no msg added)
Instructions
  1. Preheat oven to 350.
  2. Put 1/3 soup mixture on bottom of 9x13 pan.
  3. Fill burritos with burger and bean mixture.
  4. Fold up and put in pan.
  5. Top with remaining soup mixture and shredded cheese.
  6. Bake for 30-45 minutes. When serving, top with lettuce, tomatoes, etc.
